Kosambari – Green lentil Veg Salad

Kosambari is a salad specially made as prasadam or an offering to God on Ram Navami. But I love to have it as a snack meal as it is not just delicious with its simple and fresh flavours, but also easy to make and super healthy and guilt-free.

It is called as Vada Pappu in Andhra where it is made with soaked dal added with just salt and a dash of lemon juice. Kosambari is made with added vegetables like carrots, cucumber, raw mango and many more. It is called Kosumalli in Tamil Nadu.

This is my mother-in-law’s recipe. My addition to it is the pomegranate pearls that give it an added tangy twist. The tadka is completely optional but a coconut oil tadka does make it more flavourful and gives it that little addition of healthy fat.

Step-by-step

Wash the lentils atleast two times and soak it for atleast 3 hrs.

Filter the soaked dal. Rest it till all the water is gone.

Add all the veggies like shredded carrots, beets and raw mango, chopped cucumber.

Also add the coriander, fresh coconut and pomegranate pearls.

Mix everything really well. Raw mangoes can be replaced by lemon juice if they are not in season.

Heat oil, add all the ingredients for tadka in the hot oil.

As the mustard seeds splutter, add the tadka to the Kosambari.

Garnish with some more fresh coriander, coconut and pomegranate pearls before serving.

Ingredients

2 tbsp Cucumber

2 tbsp Coriander
2 tbsp Raw Mango
2 tbsp Pomegranate
2 tbsp Fresh coconut
Salt as per taste

Tadka (optional)
1 tsp Coconut oil
½ tsp Mustard seeds
½ tsp Jeera
1 Green chilli finely chopped
1 Sprig Curry leaves

Method
